Ground Beef and Eggs Recipe [Whole30]

Ingredients

  • 3 eggs
  • 1 cup ground beef Seasoned per preference
  • 2 tablespoons salsa
  • Pinch salt
  • non-stick spray

Instructions

  1. Grease a pan and add in the cooked beef, cooking over medium heat.
  2. Scramble the eggs, salsa, and salt together in a small bowl.
  3. Pour the scrambled egg mixture into the ground beef.
  4. Let it cook as is until the eggs are cooked through or move it around with a spatula to make more of a scramble and break it up (still ensuring the eggs are cooked through). Roughly 5-8 minutes.

Notes

  • This recipe uses already cooked and seasoned, lean ground beef. If you only have raw beef on hand, it’ll take longer to make. Also, if your beef is cooked but not seasoned you’ll want to season it as per your preference.
  • I use a cast-iron skillet to cook in and tallow as my non-stick. You can use avocado spray or oil in place of this.
  • Though the recipe is based on scrambling the eggs into the taco meat and cooking, if you want to switch it up you can just crack the eggs into the beef and enjoy them sunny-side up as well. I would top it all with salsa at this point.
  • Bump up the protein by using two eggs and ¼ cup egg whites for a switch-up.
  • Store leftovers in an airtight container in the fridge for up to 3 days.
