Ingredients

Fajita Seasoning
  • 1 teaspoon salt
  • 2 teaspoons garlic powder
  • 1½ teaspoons paprika
  • 2 teaspoons cumin
  • 1 teaspoon dried oregano
Ground Beef Fajitas
  • 1 pound ground beef
  • 2 teaspoons soy sauce or coconut aminos
  • juice 1 small lime
  • ¼ cup water
  • ¼ cup cilantro chopped
Fajita Veggies
  • 2 bell peppers thinly sliced
  • 1 small onion thinly sliced
  • 1 tablespoon avocado oil
  • 2 teaspoons soy sauce or coconut aminos
  • juice 1 small lime
Serving
  • 2 cups cooked white rice or cilantro lime rice
  • 1/4 cup sour cream
  • Lime wedges

Instructions

  1. Prepare the fajita seasoning. Set aside. 
  2. In a medium size skillet, add the ground beef and half of the fajita seasoning and cook over medium heat, breaking it up as it cooks. 
  3. Once meat is fully cooked, browned and no longer pink, drain any excess grease if needed. 
  4. Add in the water, soy sauce, lime juice, and cook for another 5 minutes over medium heat. Sprinkle with fresh cilantro. And stir to combine. 
  5. Remove the meat to a serving bowl or plate and set aside. To the same skillet drizzle a small amount of cooking oil. Then add the sliced bell peppers and onions. Sprinkle with the remaining half of the fajita seasoning and add the soy sauce and lime juice. Cook until veggies are softened and tender. 
  6. Serve meat and veggies over cooked rice. Top with sour cream and have additional lime wedges as desired. 

Notes

  • Storage Info: 
  • Refrigerator: Store in airtight containers for up to 4 days. Keep components separate for easier reheating.
  • Freezer: Freeze seasoned ground beef for up to 3 months. Cooked veggies can also be frozen but may soften when reheated.
  • Reheating: Warm in the microwave or stovetop, adding a splash of water or broth if needed. Reheat rice separately for best results.
