Ingredients

  • 1 lb ground beef
  • 4 tablespoon taco seasoning or 1 packet
  • 1/4 cup water
  • 4 cups Cilantro Lime Rice
  • 1 cup canned corn drained
  • 1 cup black beans drained and rinsed
  • 1 cup cheddar cheese shredded
  • 4 tablespoon cilantro
  • 1 cup tomatoes chopped
  • 1 Jalapeño sliced
  • sour cream
  • Lime wedges
  • corn tortilla chips

Instructions

  1. Heat a skillet over medium-high heat and cook the ground beef until browned. Drain the excess grease, then stir in the taco seasoning and water.
  2. Heat the cilantro lime rice according to package directions or make a homemade batch.
  3. On a plate, create a bed of rice. Spoon the ground beef into the center of the rice.
  4. Top with corn, black beans, cheddar cheese, tomatoes, jalapeño slices, and sour cream.
  5. Garnish with cilantro and squeeze fresh lime juice over the top. Use corn tortilla chips for dipping, if desired. Enjoy!
