Ground Chicken and Broccoli Stir Fry
Made with a handful of simple ingredients, this honey sriracha ground chicken and broccoli makes for the perfect weeknight dinner! Serve it over a bed of rice or in lettuce cups for an easy meal. Ingredients
For the Sauce
- ½ cup chicken broth low sodium
- 1 tablespoon cornstarch
- ¼ cup soy sauce low sodium
- 1 tablespoon mirin
- 3 tablespoons honey or more
- 3 tablespoons Sriracha or more
- 1 tablespoon sesame oil
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
For the Stir Fry
- 2 tablespoons oil divided
- 4 cups broccoli florets
- 1 pound ground chicken
- 3 green onions sliced, both white and green parts
- 1 cup frozen peas or more
Instructions
- Mix together the chicken broth and cornstarch in a small mixing bowl then add the rest of the sauce ingredients. Mix until well combined. Set aside.
- Heat a tablespoon of oil in a large skillet over medium heat. Add the broccoli and saute for 3 to 4 minutes or until almost fully cooked through. Set aside.
- Heat another tablespoon of oil over medium heat in the emptied skillet and add the ground chicken. Cook for 2 to 3 minutes, making sure to break up the pieces, until 70 to 80% cooked.
- Add the green onions and give them a quick 1 minute saute before adding the sauce to the skillet.
- Allow the sauce to simmer for 1 to 2 minutes, making sure to continue breaking up any large pieces of ground meat.
- Add the peas and broccoli and mix well until everything is evenly coated with sauce. Cook for another 2 to 3 minutes or until the sauce has thickened to your liking.
- Serve with your side of choice and garnish with more green onions and sesame seeds if desired.
