Ingredients

  • 1 tablespoon olive oil
  • 1/2 cup diced onion
  • 2 cloves garlic minced
  • 1 pound ground chicken
  • 2 tablespoons taco seasoning
  • 1/4 cup water
  • 8 small corn tortillas
  • 1/2 cup shredded lettuce
  • 1/4 cup diced tomatoes
  • 1/4 cup shredded cheddar cheese
  • 1/4 cup fresh cilantro chopped
  • Lime wedges for serving

Instructions

  1. Heat olive oil in a skillet over medium heat. Add onions and garlic, sauté until softened, about 3 minutes.
  2. Add ground chicken to the skillet. Cook, breaking it apart with a spatula, until no pink remains, about 7 minutes.
  3. Stir in taco seasoning and water. Reduce heat and simmer until most of the liquid has evaporated, about 5 minutes.
  4. Warm tortillas according to package instructions.
  5. Assemble tacos by placing chicken on tortillas, topping with lettuce, tomatoes, cheese, and cilantro. Serve with lime wedges.
