Ingredients

  • 2 tablespoons olive oil
  • 1/2 cup red bell pepper , diced
  • 1/2 cup green bell pepper , diced
  • 1/2 cup onion , chopped
  • 2 cloves garlic , minced
  • 2 teaspoons ground cumin
  • 1/2 teaspoon Coriander
  • 1/4 teaspoon cayenne pepper
  • 2 tablespoons homemade taco seasoning , or 1 packet
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon coarse ground black pepper
  • 1 pound ground chicken
  • 2 teaspoons flour
  • 1 cup chicken broth
  • 12 taco shells

Instructions

  1. Heat the olive oil in a large skillet over medium-high heat.
  2. Add red bell pepper, green bell pepper, and onion to the skillet and cook 3-4 minutes.
  3. Add the garlic, cumin, coriander, cayenne, taco seasoning, salt, and pepper and stir.
  4. Add ground chicken and break it apart.
  5. Mix in flour and cook 2-3 minutes.
  6. Add chicken broth and raise heat to a simmer, cooking 4-5 minutes until thickened.
  7. Serve in the taco shells, with shredded cheese, shredded lettuce, diced tomatoes, and sour cream.
