Ingredients
- 12 ounces short-shaped pasta
- 1 tablespoon olive oil
- 1 medium yellow onion finely minced
- 4 cloves garlic finely minced
- 1 lb ground turkey
- 2 tablespoons flour
- 1 teaspoon EACH: Italian seasoning, salt, and pepper
- 15 ounce can diced tomatoes try fire roasted!
- 1 cup chicken stock
- ½ cup cream cheese cut into small pieces
- ½ cup grated Parmesan cheese
- ½ cup whipping cream
- 3 ounces baby spinach
- 1 cup grated cheddar cheese
- minced parsley to serve
Instructions
- Bring a large pot of salted water to a boil over high heat. Add the pasta and cook for 1 minute less than the package instructions. Drain and set aside.
- While the pasta cooks, make the sauce. Heat the oil in a large frying pan with high sides (see notes) over medium heat. Add the onion and cook until it turns golden, about 4-5 minutes. Add the garlic and cook for 1 minute more.
- Add the turkey and cook, breaking it up as you go, until it is no longer pink. Stir in the flour, Italian seasoning, salt, and pepper.
- Add the tomatoes, chicken stock, and cream cheese and simmer the sauce until the cream cheese melts. Stir in the parmesan, whipping cream, and spinach and let the spinach wilt.
- Add the pasta to the sauce and stir to combine. Sprinkle the cheddar cheese over the top and cover the pan. Let it cook for 1-2 minutes, until the cheese melts. Serve right away.

- Note 1: If your large frying pan doesn't have high sides, you can mix the sauce and pasta in the pasta cooking pot.
