Ground Turkey Zucchini Boats

These delicious ground turkey zucchini boats make for the perfect low-carb dish and come together with minimal effort in under an hour.

Ingredients

  • 3 zucchini squash
  • 1 lb ground turkey
  • 1 garlic clove minced
  • 1 tbsp olive oil
  • 1/2 cup yellow onion chopped
  • 1 cup marinara sauce
  • 1 cup shredded Mozzarella cheese
  • 1 tsp garlic powder
  • 1/2 tsp Italian seasoning
  • 1/4 tsp sea salt
  • 1/4 tsp black pepper

Instructions

  1. Preheat oven to 400°F.
  2. Cut zucchini in half lengthwise and scoop out the inside, leaving enough room for the filling.
  3. Heat olive oil in a pan over medium heat. Add minced garlic and chopped onion, sauté until browned.
  4. Add ground turkey to the pan. Season with sea salt, garlic powder, Italian seasoning, and black pepper. Cook until turkey is browned.
  5. Stir in marinara sauce and cook on low heat until well combined.
  6. Fill each zucchini boat with the ground turkey mixture.
  7. Place stuffed zucchini boats on a baking sheet and bake for 22 minutes.
  8. Remove from oven, top with shredded mozzarella cheese, and bake for an additional 2-3 minutes until cheese is melted.
