We love this guacamole salad. It's the perfect light and refreshing side dish to your favorite tacos or enchiladas - and has all of the components of guacamole! So delicious and simple and customizable.

Ingredients
- 8 ounces shredded lettuce
- 2 avocados, chopped
- 1 cup chopped tomatoes
- 1 jalapeño pepper, sliced (optional!)
- ¼ cup chopped cilantro
- kosher salt and pepper
- 3 tablespoons freshly squeezed lime juice
- 1 tablespoon olive oil
Instructions
- Combine the lettuce, avocado, tomato, jalapeños and cilantro in a bowl. Season all over with a big pinch of salt and pepper. Drizzle with lime juice and olive oil. Toss well and serve immediately.
