Guinness Lamb Stew
Perfect for any time of day, this recipe delivers great flavor effortlessly.
Ingredients
- 2 Tablespoon olive oil
- 1 1/2 lbs. leg of lamb cubed, boneless
- 2 Tablespoon flour
- 1 onion chopped
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon thyme
- 1 teaspoon rosemary
- 1 cups Guinness Stout
- 1 1/1 tablespoon tomato paste
- 2 cups beef broth
- 1 bay leaf
- 1 teaspoon Dijon mustard
- 1 potato peeled and cubed
- 2 carrot sliced
- parsley for garnish
Instructions
- Heat oil in sauce pan over medium heat.
- Add lamb and cook until brown on all sides.
- Sprinkle lamb with flour and mix well.
- Add onion, salt, pepper, thyme, rosemary and cook for another 5 minutes.
- Stir in the Guinness, tomato paste, beef broth, bay leaf and Dijon mustard and bring to a boil.
- Reduce heat, cover and let simmer for 1 1/2 hours.
- Stir in the potato and carrot, cover and cook for 45 minutes.
- Spoon into bowls and sprinkle with parsley.
