Guyanese Cheese Straws

Ingredients

  • 1 ½ cups of butter
  • 1 lb cheddar cheese
  • 2 wiri wiri peppers
  • 1 tsp spicy mustard
  • 1 ½ tsp salt
  • 1 tsp paprika
  • 4 cups flour

  1. All ingredients ready? Let's begin!
  2. Set the butter out so it reaches room temperature or heat it in the microwave for a few seconds (you don't want it melted though).
  3. Preheat oven to 400F. Prep a large baking sheet (or two) with parchment paper.
  4. Grate the cheese.
  5. Cut the wiri wiri peppers in half and remove the stem and seeds. Roughly chop.
  6. In a food processor or heavy-duty blender, add the wiri wiri pepper, grated cheese, butter, spicy mustard, salt, and paprika.
  7. Pulse to blend until it all comes together in a creamy cheese paste without any lumps.
  8. Add the flour and combine until there are no lumps. You should have a thick dough-like substance.
  9. Alternatively, without a food processor:
  10. Cut the wiri wiri pepper into fine dices then add to a bowl with the cheese, butter, spicy mustard, salt, and paprika.
  11. Use a fork, pastry cutter, or potato masher to mix everything together until smooth and creamy. You can also do this with your hands.
  12. Prep a piping bag with a large, star shaped tip. If you do not have a piping set, use a ziplock bag instead.
  13. Use a spatula to transfer the cheese mixture into the piping bag or ziplock bag. If using a ziplock, get as much air out as possible before sealing it, then cut off a corner to pipe through.
  14. Pipe the cheese onto the previously prepared baking sheets. Pipe it into a thick, finger-length shape. Leave a little bit of space between each one.
  15. Put in the oven and cook 10-15 minutes or until they begin to brown.
  16. Remove from oven and allow to cook on the baking tray for 10 minutes before using a spatula to move them to a cooling rack.
  17. Allow to cool fully before serving and enjoy!
