Haitian Spaghetti (Espageti)

Haitian spaghetti or espageti, is a dish prepared in tomato sauce, which can be made with sausages (mostly hot dog), or ham (janbon) or with smoked herring (aransol).

Ingredients

  • 16 oz. Spaghetti
  • 8 oz. spicy pork sausage (or hot dog sausage), sliced
  • 1 onion , julienned
  • 1 small green bell pepper , julienned
  • 3 tablespoons tomato paste
  • ½ scotch bonnet pepper (or Habanero pepper), chopped
  • 1 teaspoon chopped fresh thyme
  • 3 tablespoons olive oil
  • 3 teaspoons salt

Instructions

  1. In a large saucepan, bring a large volume of water to a boil, and and salt.
  2. Add the spaghetti and cook until soft (about 10 minutes).
  3. Drain the spaghetti and set aside.
  4. In a large pot, add the olive oil, heat it and brown the sausage for 2 minutes
  5. Add the tomato paste, pepper, thyme, Scotch bonnet (or habanero pepper), onion and sauté for 3 minutes over medium heat, stirring frequently.
  6. Add 1 cup (250 ml) of water and bring to a boil.
  7. Add the cooked spaghetti and mix well.
  8. Lower the heat and simmer over very low heat for 5 minutes, stirring regularly.
  9. Serve hot.
