Halloween Bean Dip
This easy, healthy bean dip is perfect party food recipe for Halloween because it's got the colorful black, orange, purple and green color scheme that's ideal for this spooky holiday. This black dip is a tasty Halloween appetizer for adults. Be sure to serve the chunky bean dip with blue corn tortillas to keep that fright night vibe.
Ingredients
- 29 ounce black beans rinsed and drained, canned
- ¾ cup ROTEL drained, canned tomatoes and green chilies
- ⅓ cup red onion finely diced
- 1 bell pepper diced, orange
- 1 jalapeño seeded and minced
- ⅓ cup cilantro chopped
- 1 large garlic minced, clove
- 1 lime zested and juiced
- ¾ teaspoon kosher salt
- ½ teaspoon black pepper
SERVE WITH:
- blue corn tortilla chips
Instructions
- Combine the black beans, Ro-Tel, red onion, bell pepper, jalapeno, cilantro, garlic, lime zest and juice in a large bowl. Toss to combine.
- Season the bean dip with salt and pepper and mix well.
- Taste for seasonings and adjust as needed with extra salt or pepper, lime or even hot sauce.
