Ham and Bean Soup
Ham and Bean Soup blends savory cooked ham with great northern beans and a sauté of onion, carrots, celery, and garlic seasoned with thyme, paprika, and bay leaves. Simmered in chicken broth, this hearty soup carries mild spice and herb flavors, offering a comforting and filling dish.
Ingredients
- 2 tablespoons olive oil
- 1 onion chopped
- 2 carrot chopped
- 2 celery chopped, ribs
- 3 cloves garlic minced
- 2 bay leaf
- 1 teaspoon thyme dried
- 1/2 teaspoon paprika
- crushed red pepper flakes dash
- 4 cups chicken broth can use vegetable broth, or stock
- 2 cups ham chopped, cooked
- 2 (15 oz) great northern beans rinsed and drained, cans
- salt to taste, Kosher salt
- black pepper to taste, Kosher salt
- parsley for garnish, optional, chopped, fresh
Instructions
- In a large pot, heat the olive oil over medium heat. Add the onion, carrots, and celery and cook until tender, about 3 to 5 minutes. Add the garlic and cook for 1 minute.
- Stir in the bay leaves, thyme, paprika, and crushed red pepper flakes.
- Add the broth and bring to a low boil. Reduce heat to low and stir in the ham and beans. Season with salt and black pepper, to taste. Simmer for 15 to 20 minutes, stirring occasionally.
- Remove the bay leaves and ladle the soup into bowls. Garnish with fresh parsley, if desired. Serve immediately.
