Ham and Cabbage Soup

Ingredients
- 1 tablespoon olive oil
- 1 onion chopped, large
- 2 carrot diced
- 2 celery diced, stalks
- 3 cloves garlic minced
- 6 cups chicken broth low-sodium
- 4 cups cabbage shredded
- 2 cups ham diced, cooked
- 3/4 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- Heat olive oil in a large pot over medium heat. Add onions, carrots, and celery, cooking until softened, about 5 minutes.
- Stir in minced garlic and cook for an additional minute until fragrant.
- Add chicken broth, cabbage, and ham to the pot. Season with salt and pepper. Bring to a boil, then reduce heat and simmer for 20 minutes or until the cabbage is tender.
