Ingredients

  • 1 tablespoon olive oil
  • 1 onion chopped, large
  • 2 carrot diced
  • 2 celery diced, stalks
  • 3 cloves garlic minced
  • 6 cups chicken broth low-sodium
  • 4 cups cabbage shredded
  • 2 cups ham diced, cooked
  • 3/4 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Heat olive oil in a large pot over medium heat. Add onions, carrots, and celery, cooking until softened, about 5 minutes.
  2. Stir in minced garlic and cook for an additional minute until fragrant.
  3. Add chicken broth, cabbage, and ham to the pot. Season with salt and pepper. Bring to a boil, then reduce heat and simmer for 20 minutes or until the cabbage is tender.
