Ingredients
- 8 eggs
- ¼ cup cream/milk
- 2 tbsp chives chopped
- 1-2 tsp red chilli chopped
- salt and pepper to taste
- 4 tortillas
- 2 cups grated cheddar cheese
- 4-8 slices ham
Instructions
- In a medium-sized bowl, whisk the eggs, cream, salt and pepper together.
- Heat a large, non-stick pan over medium heat and add a teaspoon of butter or oil.
- Pour in the eggs and add the chives and chillies.
- Allow to set around the edges then push the edges into the middle of the pan with a spatula or wooden spoon. Cook until the eggs are done to your preference.
- Place a tortilla in front of you and add a little cheese, a few slices of ham and a few spoonfuls of egg to one half of the tortilla, then fold over to seal.
- Cook in a large pan over medium-low heat until golden brown on both sides with the cheese completely melted.
- Remove then serve with avocado and salsa of your choice.
