Ham and Cheese Drop Biscuits

Ham and Cheese Drop Biscuits are soft, golden baked mounds combining shredded sharp cheddar, diced ham, and fresh parsley with a tender biscuit dough. Butter is grated into the dry ingredients before mixing with buttermilk, then dropped in spoonfuls onto baking sheets and baked until puffed and browned.

Ingredients

  • 3 cups all-purpose flour
  • 1 cup cheddar cheese shredded, extra-sharp
  • ¾ cup ham diced
  • ¼ cup parsley chopped fresh leaves
  • 1 tablespoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon kosher salt
  • ½ teaspoon garlic powder
  • ¼ teaspoon black pepper freshly ground
  • ¾ cup butter frozen, unsalted
  • 1 ¾ cups buttermilk

  1. Preheat oven to 475 degrees F. Line 2 baking sheets with parchment paper or silicone baking mats.
  2. In a large bowl, combine flour, cheese, ham, parsley, baking powder, baking soda, salt, garlic powder and pepper.
  3. Grate butter using the large holes of a box grater. Stir into the flour mixture.
  4. Add buttermilk and stir using a rubber spatula until a soft dough forms.
  5. Drop 24 large mounds of the dough (about 3 tablespoons each) onto the prepared baking sheets.
  6. Place into oven and bake for 14-18 minutes, or until golden brown, rotating pans halfway through baking.
  7. Serve warm.
