Ham and Chese Puff Pastry with Apples

Ingredients
- 1 Sheet puff pastry (size: about 9½ x 15½ in.)
- 1 Apple, medium/large
- 1 Tomato, medium/large
- 7 oz (200g) ham
- 7 oz (200g) cheese (I used Gouda)
Instructions
- Preheat oven to 390°F (200°C).
- For the filling, chop the cooked ham, peel and chop the apples, chop the tomatoes, and grate the cheese. Transfer everything to a medium sized bowl and mix well together. Set aside.
- Roll out the puff pastry dough and fold it lengthwise in half. Transfer to a baking sheet and fold one half back.
- Transfer the filling onto the pastry dough and distribute evenly across one half of the sheet making sure to leave about an inch of space on the sides.
- Fold the second half of the dough over the first, line up with the bottom half and use a fork to pinch the edges shut.
- In a small bowl, beat an egg together to make an egg wash. Using a pastry brush, spread the egg wash evenly on the pastry.
- Bake for 25-30 minutes, or until golden brown.
- Serve with a dollop of sour cream or as is.
