Ham Cobb Salad
This ham cobb salad is the perfect way to use up all that leftover ham. Packed full of baby greens, hard-boiled eggs, avocado, tomatoes, gorgonzola cheese, and ham.
Ingredients
For salad:
- 6 cups mixed baby greens
- 1 cup ham diced
- 1/2 cup cherry tomato halved
- 1/2 cup gorgonzola cheese
- 1 avocado peeled, pitted, and diced
- 2 egg quartered, hard-boiled
For dressing:
- 1/4 cup white balsamic vinegar
- 1 clove garlic minced
- 1/2 teaspoon kosher salt
- 1/2 teaspoon black pepper
- 3/4 cup extra virgin olive oil
Instructions
For salad:
- Add mixed baby greens to a large bowl and top with ham, cherry tomatoes, gorgonzola cheese, avocado, and hard-boiled eggs.
- Drizzle with dressing and toss to combine.
For dressing:
- In a small bowl whisk together vinegar, garlic, kosher salt, and black pepper.
- Slowly drizzle in olive oil while whisking until fully combined.
