Ham Fried Rice

Ingredients

  • 2 tablespoons vegetable oil
  • 2 large eggs beaten
  • 1 cup diced lean ham
  • 1 cup frozen peas and diced carrots
  • 3 cloves garlic minced
  • 3 green onions chopped (whites and greens separated)
  • 3 cups cold, cooked rice preferably long-grain white or brown rice
  • 1 1/2 tablespoons low-sodium soy sauce plus more to taste
  • 1 teaspoon sesame oil
  • salt and pepper to taste

Instructions

  1. Heat 1 tablespoon of oil in a large skillet over medium heat. Add beaten eggs and scramble until set. Remove and set aside.
  2. In the same pan, heat 1 tablespoon of vegetable oil over medium-high heat. Add diced ham, frozen peas and carrots, minced garlic, and the white parts of the green onions. Stir-fry for 3-7 minutes until tender.
  3. Add the cold, cooked rice to the pan. Break up any clumps with a spatula. Stir-fry for 5 minutes until the rice is heated through and begins to brown.
  4. Return the eggs to the pan. Stir in soy sauce and sesame oil. Mix well. Cook for 2 more minutes.
  5. Remove from heat. Stir in most of the green parts of the green onions, then sprinkle the rest on top for garnish. Season with salt and pepper to taste. Serve hot.
