Harira: Moroccan Chickpea & Tomato Soup

Harira, a traditional Moroccan chickpea and tomato soup, is one of my favorite vegan dishes. Easy to make and nutritious!

Ingredients

  • 2-3 tbsp olive oil
  • 1 medium yellow onion
  • 2 cloves of garlic
  • 1 tbsp harissa oriental spice mix
  • ⅓ tsp cinnamon
  • 2 cm 3/4" grated ginger root
  • 400 g diced tomatoes fresh or canned
  • 400 g can chickpeas
  • 1 liter clear vegetable stock
  • fresh parsley or cilantro leaves
  • lemon zest

Instructions

  1. Heat the oil in a pan, then add the onion and garlic and sauté for 2-3 minutes over medium heat.
  2. Add the harissa, ginger, and cinnamon, and leave on the heat for a minute, then add the diced tomato.
  3. Bring to a boil, then add the chickpeas and vegetable stock.
  4. Let the soup simmer for 15 minutes.
  5. Season to taste with salt and sprinkle with fresh parsley/cilantro leaves and lemon zest.
