Ingredients

CRUST
  • 1 tablespoon neutral cooking oil generic cooking oil
  • 1 pound hash browns thawed, frozen; shredded
  • 2 large egg
  • 1 teaspoon kosher salt
  • 1 teaspoon black pepper freshly ground
TOPPING
  • 1 cup cheese sauce
  • 6 lices Bacon cooked and crumbled
  • 1 large tomato chopped
  • 5 large egg cracked over top
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • ½ cup Chives, chopped for garnish

Instructions

CRUST

  1. Preheat the oven to 400°F.
  2. In a large bowl, mix together the thawed hash browns, two eggs, salt, and pepper.
  3. Using your hands, firmly press the hash brown mixture into an oiled, oven-safe skillet. Bake for 45-60 minutes, or until golden brown.
TOPPING
  1. Remove the baked hash browns from the oven.
  2. Top the hash browns with the homemade cheese sauce*, bacon, and tomatoes.
  3. Crack five eggs over the top and season with salt and pepper.
  4. Bake for about 15 minutes, or until egg whites are set but yolks are slightly runny. For a less runny yolk, bake another 3-5 minutes.
  5. Garnish with chives. Serve warm.
