Hash Brown Egg Cups are easy, quick breakfast bites! Scrambled eggs with shredded cheese and bacon in a crispy tater tot potato crust baked in a muffin tin.

Ingredients

  • 48 tater tots , thawed
  • 5 large eggs
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon coarse black pepper
  • 1/2 cup shredded cheddar cheese
  • 4 lices Bacon , cooked and crumbled

Instructions

  1. Preheat oven to 400 degrees and spray a 12-cup muffin tin with baking spray.
  2. Add 4 tater tots to each muffin cup.
  3. Mix the eggs with the salt and pepper in a small bowl for 2-3 seconds.
  4. Pour into the muffin cups.
  5. Top with cheddar cheese and bacon.
  6. Cook for 15-18 minutes.
