Hasselback Sweet Potato Recipe
The Hasselback Sweet Potato recipe slices sweet potatoes thinly without cutting through, then bakes them until tender. The slices are filled alternately with cooked bacon and cheddar cheese before finishing with Parmesan, Italian dressing, and fresh chives under the broiler. This method creates a layered texture of soft potato, melted cheese, and crisp bacon with bright herb and tangy dressing accents.
Ingredients
- 4 sweet potato
- 1/2 cup Italian dressing divided
- 12 lices Bacon cooked and chopped
- 4 oz cheddar cheese cut into 48 slices
- 1/4 cup Parmesan Cheese grated
- chives chopped fresh
Instructions
- Preheat oven to 450.
- Cut a thin, lengthwise slice off the bottom of the potatoes so they will not roll.
- Cut potato crosswise without going all the way to the bottom. Do this for all the potatoes.
- Place potatoes on a foil-lined baking sheet. Brush with half of the melted butter and bake for 35-45 minutes or until tender.
- Turn on broiler. While broiler is heating up, add cheese slices in every other potato slice and bacon in the other slices.
- Combine remaining Italian dressing and Parmesan and drizzle over potatoes. Top with chives and broil for a few minutes. Serve warm and ENJOY!
