Ingredients

  • 4 sweet potato scrubbed, medium
  • 2 tablespoons butter melted, unsalted
  • 1 tablespoon olive oil
  • 1 teaspoon thyme finely chopped, fresh
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon black pepper
  • 1/4 cup Parmesan Cheese grated
  • 1 tablespoon parsley finely chopped, fresh

Instructions

  1. Preheat your oven to 425 degrees Fahrenheit and line a baking sheet with parchment paper.
  2. Carefully make thin slices along each sweet potato, stopping just before you cut through so that the slices stay connected at the bottom.
  3. Mix the melted butter, olive oil, thyme, salt, and pepper, and brush the mixture over and between the slices of each sweet potato.
  4. Bake for about 60 minutes, until the potatoes are tender inside and crispy on the outside.
  5. Remove from the oven, sprinkle with Parmesan cheese and parsley, and serve.
