Ingredients

  • 1 package 8 ounces cream cheese, softened
  • one ounces can sweetened condensed milk
  • 1/4 cup lemon juice
  • one ounces can pineapple tidbits, drained
  • 1 /22 ounces can crushed pineapple, drained
  • 1/2 cup shredded coconut
  • 1 1/2 cups multicolored miniature marshmallows divided
  • 1 1/2 cups whipping cream
  • 1 teaspoon vanilla
  • 1 tablespoon white sugar
  • 1/2 cup chopped nuts
  • 1/3 cup Maraschino cherries chopped

Instructions

  1. In a large bowl, beat the cream cheese, condensed milk and lemon juice until smooth.
  2. Add the pineapple, coconut and 1 cup marshmallows;.
  3. Beat together the whipping cream, vanilla and white sugar until it forms soft peaks. Fold into the pineapple mixture and place into the serving bowl of your choice.
  4. Sprinkle the top with the nuts, cherries and remaining marshmallows.
  5. Refrigerate for 4-5 hours - or overnight.
  6.  Serve and enjoy!
