Hawaiian Pizza Stuffed Chicken

All of the flavors of Hawaiian pizza stuffed inside a juicy piece of chicken! This is a lower carb & healthier take on pizza and kids absolutely love it!

Ingredients

  • 4 chicken breasts about 6 ounces each
  • 2 teaspoons olive oil
  • 1 teaspoon garlic powder
  • ½ teaspoon salt
  • 1 1/2 cups grated mozzarella divided
  • ¼ cup Parmesan Cheese
  • 8 lices Canadian bacon
  • 1/2 cup Pizza Sauce
  • 8 lices canned pineapple
  • parsley for garnish

Instructions

  1. Preheat oven to 375 degrees. Spray a 9x13 baking dish with non-stick spray.
  2. Place the chicken breasts on a cutting board. Use a sharp knife to cut a pocket into the side of each chicken breast.
  3. Drizzle both sides of the chicken with oil and season with the garlic powder and salt.
  4. Place 2 tablespoons of mozzarella in the pocket of each chicken breast. Add 2 slices of Canadian bacon to each piece of chicken.
  5. Place the chicken in the prepared baking dish and drizzle with the pizza sauce. Spread the sauce out to cover the tops of the chicken.
  6. Sprinkle with the remaining mozzarella. Top with the Parmesan and pineapple slices.
  7. Bake, uncovered, for 30-35 minutes or until the chicken is cooked through.
  8. Sprinkle with fresh parsley before serving.

Notes

  • Deli sliced ham works well in place of Canadian bacon if that's what you have on hand.
