Haystack Cookies

These EASY Haystack Cookies are a luscious mixture of sweet chocolate, butterscotch, and peanut butter with crunchy chow mein noodles!

Ingredients

  • 3/4 cup semi-sweet chocolate chips
  • 3/4 cup butterscotch chips
  • 1/2 cup peanut butter
  • 1 teaspoon vegetable shortening
  • 6 ounces Chow Mein noodles

Instructions

  1. In a large microwave-safe bowl, heat the chocolate chips, butterscotch chips, peanut butter and shortening in 30 second increments, stirring between each until smooth.
  2. When smooth, add the chow mein noodles, folding until fully covered.
  3. Using two spoons, make small mounds of noodles on a parchment or wax paper lined baking sheet.
  4. Place haystack cookies in the fridge to set.
