Hazelnut Madeleines

These Hazelnut Madeleines are small, soft French shell-shaped cookies enriched with toasted, finely ground hazelnuts and a hint of coffee creamer for subtle flavor. The batter, made with eggs, sugar, and browned butter, is chilled before baking for a tender texture. Optional dark chocolate dipped and chopped hazelnut toppings add a crunchy contrast and a rich finish to the delicate cakes.

Ingredients

  • 1 tick unsalted butter 1/2 cup
  • 1/2 cup hazelnut toasted and peeled
  • 3/5 cup all-purpose flour
  • 2 tablespoons coffee creamer hazelnut flavor, Coffee Mate brand
  • 1/4 cup sugar
  • 3 egg
  • salt pinch
Topping (optional)
  • 1/2 cup dark chocolate or chips, chunks
  • 1/4 cup hazelnuts chopped

Instructions

  1. Preheat oven to 350 degrees F.
  2. Grease a Madeleine Pan. Set aside
  3. Grind the hazelnuts in a food processor until fine 
  4. Place butter in a pan over medium-low heat. Melt butter and whirl the pan occasionally
  5. When butter turns brown and develops a nutty aroma, remove from heat and strain. Cool for 5 minutes
  6. In a bowl mix the all purpose flour, the ground hazelnuts and the salt
  7. In another bowl, whisk the eggs, sugar, and coffee mate. Add the butter, mix, and finally add the flour mixture slowly until combined
  8. Cover the bowl and refrigerate for a minimum of 2 hours. This step is optional but gives the cookie more flavor. 
  9. Use a piping bag or a spoon to fill each crevice of the Madeleine pan. Do not overfill 
  10. Bake for 12-15 minutes or until firm, but soft to the touch
  11. Remove from the oven and place on a cookie rack to cool
  12. For topping
  13. Melt the chocolate and place in a bowl. Place the hazelnut chunks in another bowl. Dip each cookie in the chocolate and then in the hazelnut chunks. Let the chocolate harden on a cookie rack
  14. Enjoy! 

Notes

  • Hazelnuts are toasted at 375°F for 15-20 minutes until aromatic, then rubbed in a towel to remove skins before grinding.
  • Substitute the coffee creamer with 1 tablespoon of Frangelico liqueur or pure vanilla extract for alternative flavors.
