Ingredients

  • 1 ½ cups all-purpose flour
  • ½ cup whole wheat flour or whole wheat pastry flour
  • ¾ teaspoon baking soda
  • ½ teaspoon salt sea salt
  • 1 cup cane sugar organic, or coconut sugar
  • ¼ cup butter softened or melted coconut oil
  • 2 large egg
  • 3 banana mashed (1 ½ cups, ripe
  • ⅓ cup yogurt plain, Greek
  • 1 teaspoon vanilla extract
  • ½ teaspoon cinnamon

Instructions

  1. Preheat oven to 350°F and line a loaf pan with parchment paper or coat with nonstick spray.
  2. Combine the flour, baking soda, salt and cinnamon in a large mixing bowl.
  3. Place sugar and butter in a large bowl, and beat with a mixer at medium speed until well blended (about 1 minute).
  4. Add the eggs, 1 at a time, beating well after each addition.
  5. Add banana, yogurt, and vanilla; beat until blended.
  6. Add flour mixture to the wet mixture and beat at low speed just until moist.
  7. Spoon batter into prepared loaf pan.
  8. Bake at 350°F for 1 hour or until a tooth pick or butter knife inserted in center comes out clean. Cool 10 minutes in pan on a wire rack; remove from pan. Cool completely on wire rack.

Notes

  • To reduce sugar content, lower the sugar to ½ cup instead of 1 cup without affecting texture greatly.
  • For a dairy-free option, use melted coconut oil or vegan butter and substitute plain Greek yogurt with a dairy-free alternative.
  • Ensure bananas are ripe for natural sweetness and moisture in the bread.
