Ingredients

  • 2 banana mashed, medium ripe
  • 1 cup quick oats uncooked
  • 1/4 cup walnuts crushed

Instructions

    Cup of Yum
  1. Preheat oven to 350°F.  Spray a non-stick cookie sheet with cooking spray or use a Silpat.
  2. Combine the mashed bananas and oats in a bowl. Fold in the walnuts.
  3. Place a tablespoon of each on the cookie sheet.
  4. Bake 15 minutes. Makes 16 cookies.

Notes

  • Use gluten-free quick oats such as Bob's Red Mill for a gluten-free version.
  • Cookies can be frozen after cooling; wrap tightly and thaw or microwave briefly before eating.
