Ingredients

  • 4 lices Bacon center cut
  • 4 ½ cups Napa cabbage thinly sliced
  • 2 ½ cups red cabbage thinly sliced
  • 2 carrot grated
  • ¼ cup cilantro minced
  • 1 ¼ cups grape tomatoes each cut in half
The Dressing:
  • 2 tablespoons lime juice fresh
  • 2 tablespoons extra virgin olive oil
  • 2 teaspoons agave nectar or honey
  • ⅛ teaspoon salt

Instructions

  1. Place the bacon slices in a single layer in a large nonstick skillet set over medium heat. Turn until browned and crispy. Transfer to a paper towel to drain. Dispose of any grease from the skillet. Once cool enough to handle, crumble the bacon.
  2. In a large bowl, combine the Napa cabbage, red cabbage, carrot, cilantro and tomatoes. Toss with the dressing. Serve.
The Dressing:
  1. In a small bowl, whisk together the lime juice, olive oil, agave nectar and salt.
