Healthy Buffalo Chicken Rice Bowls
These power-packed buffalo chicken rice bowls have it all and are easy to assemble in 10 minutes for a quick dinner, a packed lunch, or both!
Ingredients
- 4 cups rice or cauliflower rice, steamed
- 2 ½ cups chicken warmed, buffalo style, slow cooker, reserved
- 1 avocado peeled, pitted, and diced
- 1 cup cherry tomato halved
- ½ cup red onion diced
- ½ cup blue cheese crumbled
- ½ cup ranch dressing
Instructions
- In 4 separate bowls, divided the rice. Top with buffalo chicken, avocado, cherry tomatoes, red onion, and blue cheese.
- Drizzle each bowl with Ranch dressing and serve.
