These power-packed buffalo chicken rice bowls have it all and are easy to assemble in 10 minutes for a quick dinner, a packed lunch, or both!

Ingredients

  • 4 cups steamed rice or cauliflower rice
  • 2 ½ cups reserved Slow Cooker Buffalo Chicken warmed
  • 1 avocado peeled, pitted, and diced
  • 1 cup cherry tomatoes halved
  • ½ cup diced red onion
  • ½ cup crumbled blue cheese
  • ½ cup ranch dressing

Instructions

  1. In 4 separate bowls, divided the rice. Top with buffalo chicken, avocado, cherry tomatoes, red onion, and blue cheese.
  2. Drizzle each bowl with Ranch dressing and serve.
