Ingredients

  • 3 boneless skinless chicken breasts
  • ¼ cup mayonnaise
  • ¼ cup Dijon mustard
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 4 oz sliced ham
  • 4 oz sliced swiss cheese

Instructions

  1. Preheat oven to 425.
  2. Slice the chicken breasts in half lengthwise into cutlets.
  3. In a small bowl, whisk together the mayo, Dijon, salt and pepper.
  4. Place the chicken cutlets on a greased sheet pan. Top each cutlet with 2 Tablespoons of the mayo mixture and spread to cover.
  5. Next, top each sauced cutlet with 3 rolled-up slices of ham. Finally, top the ham with slices of Swiss Cheese. Bake at 425 for 25 minutes, then serve.

Notes

  • Hint: Line the baking pan with parchment paper or foil prior to baking for easy cleanup.
