Healthy Chicken Pasta Salad

Serve this healthy chicken pasta salad as a crowd-pleasing side dish or a light dinner. Classic chicken salad ingredients get a whole new look with the addition of penne pasta, fresh parsley, and a creamy sweet dressing.

Ingredients

  • 2 cups chopped or shredded cooked chicken
  • 10 ounces cooked penne pasta
  • 1 cup quartered red grapes
  • ½ cup Chopped Pecans
  • ½ cup diced celery
  • ¼ cup sliced green onion
  • 3 tablespoons chopped fresh parsley
Dressing
  • 1 ¼ cups mayonnaise
  • 1 tablespoon lemon juice
  • 3 tablespoons milk more if needed
  • 2 tablespoons honey
  • 1 tablespoon Dijon mustard
  • salt to taste
  • ground black pepper to taste

Instructions

  1. Add the 1 ¼ cups mayonnaise 1 tablespoon lemon juice, 3 tablespoons milk 2 tablespoons honey, 1 tablespoon Dijon mustard , salt t, and ground black pepper to a medium bowl and whisk to combine.
  2. Place 10 ounces cooked penne pasta in a large bowl. Add 2 cups chopped or shredded cooked chicken 1 cup quartered red grapes ½ cup chopped pecans ¼ cup sliced green onion ½ cup diced celery and 3 tablespoons chopped fresh parsley.
  3. Pour the dressing over the pasta and toss to coat evenly.
  4. Serve and enjoy!
