Healthy Chocolate Avocado Cookies

Ingredients

  • 2 avocados peeled, pit removed
  • 1/4 cup almond flour
  • 1/2 cup cocoa powder unsweetened
  • 1/2 cup coconut sugar
  • 2 eggs
  • 1/2 teaspoon baking soda
  • 1/2 cup chocolate chips optional

Instructions

  1. Preheat oven to 350°F. 
  2. Combine all ingredients (except chocolate chips) in food processor and blend until smooth.
  3. If using chocolate chips, stir in by hand.
  4. Spoon onto a baking pan covered with a sheet of lightly-greased foil, or non-stick silicone baking mat. We use about a tablespoon of batter for each cookie.
  5. Bake for 10 minutes at 350°F.
  6. Remove from oven and allow to cool to room temperature, then store in an airtight container in fridge (for 2-3 days) or freezer (for about a week).
