Ingredients

  • 1 cup quick cooking rolled oats
  • 1/2 cup almond flour
  • 1/4 cup of Honey
  • 1 large egg
  • 1/4 cup melted coconut oil*
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon kosher salt
  • 1/2 cup sugar free dark chocolate chips (such as Lily's)

Instructions

  1. Preheat your oven to 350 degrees F. Line 2 baking sheets with parchment paper.
  2. In a large mixing bowl, combine the rolled oats, almond flour, baking powder and salt and mix.
  3. Add the honey, egg, melted coconut oil, vanilla extract and egg and mix well until the ingredients are well combined. Stir in the dark chocolate chips.
  4. Drop the dough by level tablespoonfuls onto the prepared baking sheets.
  5. Bake the cookies for 8-10 minutes, or until they are lightly golden brown.
  6. Let the cookies cool on the baking sheet for a few minutes, then transfer them to a wire rack to cool completely. Makes 24.
