Healthy Garden Veggie Dip

This Healthy Garden Veggie Dip combines sour cream, Greek yogurt, fresh herbs, and finely grated vegetables for a creamy and lightly textured dip. Ingredients

  • 1.5 cups sour cream light
  • ½ cup Greek yogurt plain, nonfat
  • 1 tsp garlic powder
  • 1 tsp onion powder or dried minced onion
  • ¼ tsp dill dried
  • ½ tsp salt sea salt
  • 2 TBSP parsley fresh chopped
  • 2 TBSP green onion plus extra to taste, fresh, chopped
  • ¼ cup carrot approx. 1/2 a carrot, finely grated
  • ¼ cup broccoli chopped florets
DELISH DIPPERS:
  • carrot
  • broccoli
  • cauliflower
  • cucumber slices
  • celery sticks
  • bell pepper sliced
  • Pita chips
  • tortilla chips

Instructions

  1. For the carrot, shred using the fine side of your favorite cheese grater, it's super easy!
  2. For the broccoli, use kitchen scissors or a pairing knife to remove just the tippity top of the florets (no stems whatsoever) from the broccoli.
  3. Combine all ingredients and mix.
  4. Adjust seasoning to taste as needed. 
  5. Pop it in the fridge overnight to allow the flavors to amplify. If desired, you can even kick up the seasoning the next morning by adding extra of your favorite spices or salt and pepper to taste.
  6. I've made this dip a few times now and I have to admit that it's not a whisk-together-and-faceplant kind of dip. The real deliciousness happens when the herbs, seasoning, and veggies get up close and personal in the fridge. Trust me, it's exponentially better if you let it sit overnight. It's science. Food Science. Do the right thing!
  7. Serve dip alongside all your favorite dippers and watch it disappear!

Notes

  • Substitute ½ cup mayonnaise for Greek yogurt if preferred; it changes texture and flavor but is still tasty.
  • Store the dip in the refrigerator and consume within 4 days for freshness.
  • Chilling the dip overnight is recommended to allow flavors to fully develop.
