This Healthy Greek Yogurt Chicken Salad combines tender cubed chicken with a crisp mixture of scallions, red onion, celery, apple, red grapes, and roasted sliced almonds. Ingredients
For The Dressing:
- 1 cup Greek yogurt
- 2 cloves garlic minced
- 4 tablespoons lemon juice freshly squeezed
- 2 tablespoons olive oil
- 1 teaspoon kosher salt
- ¼ teaspoon black pepper
- ¼ cup dill optional or parsley, chopped, fresh
For The Salad:
- 3 cups chicken cut into small cubes, cooked
- 3 scallions thinly sliced
- ¼ cup red onion chopped
- 2 celery sliced, stalks
- ½ cup apple cubed
- ½ cup red grape halved if they are large
- ⅓ cup almonds preferably roasted, sliced
Optional Add-ins:
- 1 avocado cubed, small
- ½ cup cucumber thinly sliced
- ¼ cup radish thinly sliced
- 3 tablespoons chives with flowers if they are in season
Instructions
- To make the dressing: Whisk together yogurt, garlic, lemon juice, olive oil, salt and pepper in a bowl. Add in the fresh dill, if using. Set it aside.
- To make the salad: Place chicken, scallions, red onion, celery, apples, grapes, and almond into a bowl. If you are adding the additional toppings feel free to do that now.
- Drizzle it with the dressing. Give it a gentle toss. Taste for seasoning and add in if necessary.
- Serve.
Notes
- Roast bone-in chicken breasts as an alternative to pre-cooked chicken for this salad.
- Store the chicken salad in an airtight container in the refrigerator for up to 5 days.
- Freezing is not recommended because Greek yogurt dressing may separate and food safety risks increase after prolonged temperatures above refrigeration.
- Optional ingredients can be added to customize texture and flavor according to preference.
