Healthy Homemade Granola

This easy homemade granola is the perfect healthy snack. Loaded with flavor from honey, ginger, and lemon - and packed with crunch from almonds, pecans, pepitas, and coconut flakes!

Ingredients

  • ½ cup flaked almonds
  • ½ cup pumpkin seeds
  • ½ cup pecan
  • ½ cup coconut flakes
  • 2 tbsp. lemon zest
  • 1 tsp. ginger powder
  • ¼ tsp. salt
  • ¼ cup honey
  • ⅓ cup grape seed oil
  • ¼ tsp. lemon oil
  • 1 egg white optional, but makes a big difference

Instructions

  1. Place your rack in the center of the oven, then preheat to 275°F.
  2. Line a baking sheet with parchment paper and set aside.
  3. In a bowl, mix all dry ingredients. Then add honey and oils.
  4. A trick to make crunchier granola: beat an egg white and incorporate it by folding it gently into the mixture.
  5. Spread the mixture on a baking sheet. Bake for about 10 to 15 minutes, stirring every 5 minutes to obtain a uniform color.
  6. Cool completely before putting in an airtight container.
