Ingredients

  • 4 pounds sweet potato cut into 1-inch thick slices
  • 2 teaspoons cinnamon
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon thyme dried
  • 4 tablespoons butter
  • 1/4 cup unsweetened almond milk or skim milk
  • 1 1/2 teaspoons salt plus more for boiling

Instructions

  1. Place the potatoes in a large pot with generously salted, cold water and cover at least an inch.
  2. Bring to a boil. Once boiling, cover and reduce to a gentle simmer. Cook until the potatoes can easily be pierced with a fork, about 20 to 25 minutes. Drain the potatoes well and place them back into the pot. Use a paper towel to blot off excess water.
  3. Melt the butter with the milk in a small pan and then pour into the potatoes.
  4. Mash the potatoes using a potato masher or potato ricer.
  5. Add the cinnamon, ginger, nutmeg, thyme, and salt. Taste and adjust the seasoning.
  6. DEVOUR!
