Healthy No Bake Oatmeal Raisin Cookies

A healthy oatmeal raisin version of the classic no bake cookies!

Ingredients

  • 2 tablespoons melted coconut oil
  • 1/3 cup maple syrup
  • 1/4 cup mashed banana, about 1/2 of a banana
  • 1/4 cup unsweetened almond milk, or milk of choice
  • 1/4 cup almond butter, drippy/runny almond butter works best
  • 1 teaspoon vanilla extract
  • 2 cups old fashioned rolled oats
  • 1/3 cup raisins
  • 2 tablespoons Chopped Pecans
  • 1 1/4 teaspoons ground cinnamon
  • 1/8 teaspoon ground nutmeg
  • 1/8 teaspoon kosher salt

  1. In a medium sized saucepan over medium heat whisk together the melted coconut oil, maple syrup, mashed banana, almond milk, and almond butter until smooth.
  2. Bring the mixture to a boil then immediately remove from the heat. Whisk in the vanilla extract. Add in the remaining ingredients and fold together with a rubber spatula until everything comes together.
  3. Line a baking sheet with parchment paper or wax paper and use a small ice cream scoop (about 1 1/2 tablespoon size) to scoop out the cookie dough.
  4. Place the cookies in the freezer or refrigerator to set up for 15-20 minutes before eating. Store the cookies in an airtight container in the freezer or refrigerator.
