Healthy Peppermint Patties

Delicious and healthy peppermint patties with coconut filling.

Ingredients

  • ½ C coconut oil room temperature
  • 1 ½ teaspoon peppermint extract feel free to increase or decrease depending how strong you like it
  • 4 tablespoon icing sugar
  • 4 tablespoon dried coconut flakes finer flakes will yield a smoother texture
  • 250 g chopped dark chocolate to cover the patties I used 72% dark chocolate

Instructions

  1. Mix together room temperature coconut oil with the peppermint oil. Add in icing sugar.  Mix well. Add coconut flakes and stir together. If the mixture seems warm, pop the mixture into the freezer for 5 minutes, until slightly firm.
  2. If the mixture is not too warm and can be shaped, then form balls with a tablespoon. Press down balls to flatten into a round patty shape.
  3. Place the patties into the freezer for another 5 minutes to harden.
  4. Add chopped chocolate to a microwave-safe bowl and heat for 20 seconds at a time, until completely melted.
  5. Remove patties from the freezer, and carefully dip into the chocolate to cover using a 2 spoons or 2 forks. Place onto the parchment-lined tray and repeat with the remaining. Place the patties into the freezer for another 10 minutes.
  6. Tip: If you have excess chocolate, I scrape it onto a piece of parchment paper, place it in the fridge to harden, and then you can use it again for a different recipe.
  7. Enjoy. Store the peppermint patties in an airtight container in the refrigerator.
