Healthy Pumpkin Spice Brownies (vegan)

Healthy gooey pumpkin spice brownies that are vegan & gluten-free! Made with chickpeas, these fudgy brownies are protein-packed! Perfect for athletes and kids.

Ingredients

  • 1 can chickpeas
  • 6 tablespoon almond butter *
  • ½ cup maple syrup
  • 2 teaspoon vanilla extract
  • ⅓ coconut sugar
  • ¼ cup almond flour **
  • ¼ cup 100% cacao powder
  • ½ teaspoon baking soda
  • ½ teaspoon baking powder
  • 3 teaspoon pumpkin pie spice
  • ¼ teaspoon salt
  • ½ cup chocolate chips

  1. Preheat your oven to 350F and lightly grease and line an 8” x 8” tin with parchment paper. 
  2. Drain and rinse chickpeas under COLD water for at least 30 seconds. Gently pat dry.
  3. Add chickpeas, almond butter, maple syrup, vanilla extract, coconut sugar, almond flour, cacao powder, baking soda, baking powder, pumpkin spice, and salt into a food processor. Blend until completely smooth. For about 45 seconds to 1 minute. 
  4. Remove the blade and fold in the chocolate chips with a spatula.
  5. Evenly spread the batter into the greased tin and sprinkle the rest of the chocolate chips on top.
  6. Bake for 25-30 mins, or until a toothpick comes out clean.
  7. Let cool before serving, and enjoy!
