Healthy Side Dishes: Microwave Cauliflower Fried Rice Recipe

Microwave cauliflower Fried Rice is healthy, delicious, and so easy to make. It’s one of our favorite healthy side dishes recipes.

Ingredients

  • 1 medium head cauliflower
  • 2 cups mixed vegetables fresh or frozen
  • 3 large eggs beaten
  • salt and pepper to taste
  • 1/2 teaspoon Asian sesame oil
  • chopped green onion

Instructions

  1. Shred the cauliflower into coarse breadcrumb-size pieces using a grater.
  2. Transfer the rice to a large paper towel or kitchen towel, squeezing to remove any excess moisture.
  3. In a large microwave-safe bowl, add cauliflower rice and mixed vegetables. Cover with a lid or plastic wrap and cook on high for 2 minutes.
  4. Beat the eggs in another bowl, and add it on top of the cauliflower rice.
  5. Cover with the lid or plastic wrap, and microwave on high for 45 seconds (the eggs will be half-cooked at this point).
