Healthy Sloppy Joes

Lentils and carrots bring a sneaky twist to the classic American comfort food. These Healthy Sloppy Joes are so flavorful, you won't even notice the extra veggies!

Ingredients

  • 1 lb ground beef (90% lean)
  • 1 onion, minced
  • 1 carrot, grated
  • 1 c cooked lentils
For the Sauce
  • 1 (6 oz) can tomato paste
  • ½ c white vinegar
  • 2 Tbsp sugar
  • 2 Tbsp molasses
  • 2 tsp mustard powder
  • 1 tsp chili powder
  • 1 tsp salt
  • ¼ tsp ground cloves
  • 1 c water

Instructions

  1. In a large frying pan, brown the ground beef over medium-high heat for 2-3 minutes.
  2. Add the onion and grated carrot. Sauté for 3-5 minutes, until the onion begins to soften.
  3. Add the lentils and sauce ingredients (except the water). Mix well.  
  4. Add the water and bring the mixture to a simmer. Reduce the heat and simmer, uncovered for 5-10 minutes, stirring occasionally, until the sauce thickens to your liking.
