Healthy Spinach Artichoke Dip

This Healthy Spinach Artichoke Dip uses blended Greek yogurt and cottage cheese with mayonnaise, spinach, artichoke hearts, garlic, and cheeses to create a creamy, baked dip. Ingredients

  • ¾ cup Greek yogurt full-fat, plain
  • ¾ cup cottage cheese
  • ⅓ cup mayonnaise made with avocado oil
  • 1 oz can artichoke hearts drained WELL, squeezed and patted dry, packed in water
  • 6 ounces spinach squeezed WELL to release liquid, thawed, frozen
  • 2 garlic minced, cloves
  • ¼ cup Parmesan Cheese high quality, grated or shredded
  • ½ teaspoon onion powder
  • ¼ teaspoon black pepper plus more to taste, ground
  • ⅛ teaspoon salt sea salt
  • 1 cup mozzarella cheese divided, shredded
  • Pinch salt if needed

Instructions

  1. Preheat oven to 375°F and spray a small baking dish with cooking spray. I used an 8x8 glass baking dish.
  2. Blend yogurt and cottage cheese together in a blender or food processor until creamy. Add mayo, artichoke, spinach and minced garlic and pulse until combined.
  3. Place mixture in a bowl and stir in parmesan cheese, ¾ cup mozzarella, onion powder, pepper and salt.
  4. Place mixture into prepared baking dish and top with remaining ¼ cup mozzarella cheese.
  5. Bake in the preheated oven until the cheese is melted, bubbly and browning a bit, about 20-25 minutes. Broil for an additional 1-2 minutes if you want to brown your cheese even more.
  6. Remove from oven and serve warm with crusty bread, crackers, chips or veggies.

Notes

  • If using fresh spinach, cook and wilt it first, then squeeze out excess liquid and roughly chop before adding.
  • To thaw frozen spinach quickly, run warm water over it in a strainer and squeeze out moisture thoroughly.
  • If a food processor is unavailable, a hand mixer can blend the mixture smoothly.
