Ingredients
For the sausage and peppers
- 3 tablespoons olive oil, divided
- 1 20-ounce package Honeysuckle White Hot Italian Turkey Sausage Links, cut into coins
- 1 teaspoon minced garlic (about 2 cloves)
- 2 bell peppers, thinly sliced (any color)
- 1 poblano pepper thinly sliced
- 1 medium yellow onion, thinly sliced
- 1 teaspoon kosher salt
- 1/4 teaspoon cumin power
For the Cilantro Lime Cauliflower Rice
- 1 small cauliflower, cut into small florets
- 1/3 cup water
- 1 teaspoon kosher salt
- 1/3 cup minced cilantro
- 1 1/2 limes juiced (about 3 tablespoons)
Instructions
For the sausage and peppers
- Heat a large saute pan over medium-high heat. Add 2 tablespoons of olive oil.
- Add the sausage coins and cook until sausage is browned and fully cooked through, about 5 minutes per side. Remove sausage from pan and transfer to a large bowl. Set aside.
- In the same saute pan, add remaining tablespoon of olive oil and minced garlic. Cook for 30 seconds, until garlic is fragrant.
- Add bell peppers, poblano pepper, onions, salt and cumin powder. Cook for 10 minutes, stirring occasionally, until the veggies are soft.
- Add the cooked sausage back to the pan and mix together with the cooked veggies. Reduce heat to very low and keep warm until ready to serve with the Cilantro Lime Cauliflower Rice.

For the Cilantro Lime Cauliflower Rice
- Lightly pulse florets in a food processor until it resembles rice or grate cauliflower using a large cheese grater.
- Place cauliflower rice into a large microwave-safe bowl. Add water, salt and mix together. Microwave on high for 3-4 minutes.
- Add cilantro and lime juice. Mix together and serve with turkey sausage and pepper.
Notes
- If you don't want to make cauliflower rice from scratch, you can use 2 10-ounce bags of frozen cauliflower rice instead of buying a head of cauliflower. Simply heat the cauliflower rice according to the instructions on the package, transfer the heated rice to a large bowl and mix in the salt, cilantro and lime juice.
