Healthy Turkey Taco Meal Prep Bowl

A healthier version of the popular taco bowls for lunch, this healthy turkey taco meal prep bowl will have you reaching for seconds! Made in under 30 minutes, it's simple but delicious!

Ingredients

  • 2 lb ground turkey
  • 3 cloves garlic minced
  • 1 packet taco seasoning
  • 1 cup quinoa
  • 1 tbsp chicken stock
  • 1 cup corn
  • 4 lime wedge to serve
Optional Toppings
  • cheese
  • guacamole
  • sour cream
  • yogurt

Instructions

  1. In a pot, cook your quinoa with the chicken stock. (Follow the instructions on the packet, it's usually 1:1 quinoa to water ratio)
  2. If you're using frozen corn, bring a pot of water to boil and cook your corn.
  3. While the quinoa is cooking, start cooking your turkey with the garlic and taco seasoning.
  4. Once everything is done, assemble the meal prep bowls by dividing up the turkey, quinoa, corn, and lemon wedge. Optional toppings include guacamole, sour cream, and yogurt but it needs to be added when serving as it cannot be reheated!
